Online Lessons
In April 2020, in response to the refrain from going out due to the pandemic, we have started an online class to learn modern American cooking that can be enjoyed with ingredients which are available in your neighborhood. Basically, we offer weekday and holiday classes, basically once a month each. You can efficiently learn two appetizers, a main course, and a dessert (dessert is a recipe only) in about an hour. We will send you the recipe and photos of the preparation in advance, and send you the recording after the online class. This means that you can make the dishes at the same time as the online class, or you can watch the online and make them later at your leisure.
NOTE: Online Cooking Lessons are scheduled accordingly. Ask us for the next event.

Our lessons are based on demonstrations.
You can enjoy the lessons by tasting foods and communicating with other participants in relaxing atmosphere.
We offer Seasonal Modern American Cuisine Lessons as well as Special Sessions.

We teach you various cooking methods such as grilling, sautéing, poaching, simmering, and roasting, which bring out natural deliciousness of ingredients. They are not complicated but simply and easy.
We help you increasing knowledge of sauces, purée, nuts and spices. So that, you can create your own dish by playing with all the ingredients in your kitchen.
We teach you how to make pretty plating in Modern American Style. Appearance is an important factor to enjoy foods.
We provide information about culinary trends in Modern American Cuisine, particularly in New York area.
Special Sessions
We plan various sessions focusing on seasonal events, home entertainment and current trends. In the past, we offered sessions such as Modern Mexican, Modern Osechi (New Year Dishes), Finger Foods, Outdoor Cooking and Wine Pairing.
We also offer collaborative sessions with other chefs such as French pastries and and Modern American Cuisine.
We always think about ideas for interesting session.

Modern American Culinarian. After having working as an investment analyst in the financial institutions for more than 20 years, she graduated from the Culinary Institute of America with an Associate Degree in Culinary Arts in 2017. She worked in Gramercy Tavern in New York for the externship program. After graduation, she worked as a cook in Union Square Café and Bouley at Home in New York. She also had Culinary and Pastry Diplomas from Le Cordon Bleu Tokyo. She is a graduate of Sophia University in Tokyo.

I cook Modern American Cuisine.
There are many wonderful traditional American foods.
America is also called a melting pot. There are many chefs who have
different cultural backgrounds and have studied international cuisine.
American cuisine has been progressing continuously as chefs create new dishes by incorporating international cuisine with traditional American cuisine.
In addition, as people has become more health conscious, healthy cuisine which maximizes the natural deliciousness and beauty of seasonal ingredients has become popular.
In my words, Modern American Cuisine is a healthy, beautiful and delicious cuisine.
